***** The hip of Rosa rugosa seems to be good for rose hip jam, since it is so big that it is easy to remove the hairy achenes and seeds. (As the hairy achenes are said to cause some kinds of allergies, you have to remove them carefully.) It tastes a little astringent, but even so, it makes me so romantic. *****

* 1 cup cleaned rose hips
* 1 cup sugar

Split hips open and scrape out the hairy achenes and seeds by cleaning them carefully with water. Put the hips and sugar into the saucepan, and cook the mixture slowly, stirring it to prevent it from burning until the hips become so-called paste stage. Strain and remove fibers.
